Ingredients
  

  • 4 cups stale bread cubes
  • 4 l arge eggs
  • 1 cup shredded cheddar cheese
  • 1 cup chopped spinach
  • 1/2 cup diced tomatoes
  • 1/4 cup milk
  • 2 tbsp melted butter
  • 1 tsp fresh thyme
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F. Grease a muffin tin or line with silicone liners.
  • In a large bowl, combine bread cubes, cheese, spinach, and tomatoes.
  • Whisk eggs, milk, butter, thyme, salt, and pepper in a separate bowl. Pour over bread mixture and let sit for 10 minutes.
  • Spoon mixture into muffin tin, filling each cup ¾ full. Bake for 25-30 minutes, until golden and set.
