Ingredients
  

  • 2 cups cooked chickpeas or 1 can, drained and rinsed
  • 1 medium roasted beet, diced
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon cumin
  • 2-4 tablespoons water for desired consistency

Instructions
 

  • Combine all ingredients in your food processor or blender.
  • Process until smooth, scraping down the sides as needed.
  • Add water, 1 tablespoon at a time, until desired consistency is reached.
  • Taste and adjust seasoning, if necessary.
  • Serve with fresh vegetables, pita bread, or crackers.
