Ingredients
  

  • 2 cups cooked quinoa
  • 1 1/2 cups milk dairy or non-dairy
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • Pinch of salt
  • 1 cup mixed berries fresh or frozen
  • 1/2 cup chopped nuts almonds, walnuts, or pecans

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a 9x9 inch baking dish.
  • In a large bowl, whisk together milk, eggs, honey, vanilla, cinnamon, and salt.
  • Stir in cooked quinoa, ensuring it's evenly coated with the liquid mixture.
  • Gently fold in berries and nuts, reserving a few for topping.
  • Pour the mixture into the prepared baking dish and sprinkle with remaining toppings.
  • Bake for 35-40 minutes, or until set and golden brown.
  • Let cool slightly before serving, or portion into containers for meal prep.
