- 2 cups cooked quinoa
- 1 1/2 cups milk dairy or non-dairy
- 2 large eggs
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- Pinch of salt
- 1 cup mixed berries fresh or frozen
- 1/2 cup chopped nuts almonds, walnuts, or pecans
Preheat oven to 375°F (190°C). Grease a 9x9 inch baking dish.
In a large bowl, whisk together milk, eggs, honey, vanilla, cinnamon, and salt.
Stir in cooked quinoa, ensuring it's evenly coated with the liquid mixture.
Gently fold in berries and nuts, reserving a few for topping.
Pour the mixture into the prepared baking dish and sprinkle with remaining toppings.
Bake for 35-40 minutes, or until set and golden brown.
Let cool slightly before serving, or portion into containers for meal prep.
