Ingredients
  

  • 1 cup quinoa
  • 2 eggs
  • 1 cup breadcrumbs
  • 1 carrot
  • 1 zucchini
  • 1 cup spinach
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Oil for frying

Instructions
 

  • Rinse and cook quinoa until fluffy. Sauté chopped carrots, zucchini, and spinach. Combine cooked quinoa, sautéed veggies, beaten eggs, breadcrumbs, cumin, paprika, garlic powder, salt, and pepper in a bowl. Shape mixture into patties. Fry in oil until golden brown on both sides.
