Juicy Roasted Chicken
This roasted chicken recipe is the way my grandmother used to make it. This method results in the juiciest chicken! We loved to nibble on the celery after it was cooked. Roasted chicken always impressive but simple to make. This roasted chicken recipe is preferable for both beginner and old cooks.

Ingredients
- 1 (3 pound) whole chicken (giblets removed)
- Salt & Black Pepper (to taste)
- 1 Tablespoon Onion Powder
- ½ Cup Butter / Margarine
- 1 Stalk Celery (leaves removed)
Directions
- First at 350 degrees F (175 degrees C) preheat the oven.
- In a roasting pan place the chicken; with onion powder, salt & pepper – generously season inside & outside.
- In chicken cavity place 3 tablespoons of butter; on the outside of the chicken arrange dollops of remaining butter. After cutting celery into 3/4 pieces, place in the chicken cavity.
- In the preheated oven bake the chicken as uncovered for about 1 hour & 15 mins until its no longer pink at the bone as well as the juices run clear
- Take a reading with an instant-read thermometer by inserted into the thickest part of the thigh, near the bone, read should be about 165 degrees F (74 degrees C).
- Bring out the chicken from oven and baste with drippings. Then with aluminum foil cover it fully. Before serving, allow it to rest for about 30 minutes.
